The samples were contaminated with arsenic in the form of sodium arsenate(V) at different concentrations (0, 0.1, 1, 5, 50, 200, 1200, 4000 mg/kg As). There were no changes in the amino acid composition for the concentrations of 0.1–0.5 mg/kg As(V). The amino acids content in-creased at the concentrations of 50 and 200 mg/kg As(V).
