• Shepherds were used to eat the edible parts of the receptacles in Alpine regions. • Phenolic glycosides, a terpenic lactone and a spermine derivative were identified. • Fatty acids, β-carotene, ascorbic acid, and minerals were quantified. • Total phenolic content was determined and major flavonoids were quantified. • No cytotoxicity was observed in an in vitro assay on Caco-2 cells. |
