• Zwitterionic chitin nanocrystals (NCs) were prepared. • Both anionic and cationic charges were introduced in chitin NCs. • Morphology, transparency, and viscosity of NCs were dependent on the water pH. • Thus, water pH can be adjusted to control the rheology and texture of chitin NCs.
