• AN-PEP degrades gluten efficiently under stomach-like conditions. • A carbonated drink improves AN-PEP-mediated gluten degradation. • Other dietary proteins decrease AN-PEP-mediated gluten degradation. • Fat does not have any effect on AN-PEP activity.
