The bioaccessibility of Se in Se-enriched food supplements and food crops was found to be highest in the small intestine. Compared to SelenoPrecise and Se-ACE tablets, a yoghurt-based supplement exhibited a much lower Se bioaccessibility, possibly due to the presence of nano- or microparticles of elemental Se. Colon microbiota were found to primarily affect Se bioaccessibility in the colon environment, with the presence of inactivated microbiota resulting in a higher bioaccessibility.
