Profile of phenolic compounds in Indonesian rice (Oryza sativa) varieties throughout post-harvest practices

• Pressurized liquid extraction and HPLC were used for the determination of phenolics in rice grains. • Phenolics were determined after drying, dehusking and polishing processes. • Phenolics decreased dramatically throughout post-harvest processing steps.
