Effects of high intensity ultrasound modification on physicochemical property and water in myofibrillar protein gel
• We investigated how HIU affected physicochemical properties of MP. • Stronger HIU induced greater denaturation and unfolding of proteins. • Gel microstructure at 600W hold water best in MP gel. • Bound water increased in MP gel as HIU power increased.
