• Extruded fish feed was prepared with five different added aromatic compounds. • The effects on lipid oxidation were assessed by TBARS and induced TBARS. • Samples were obtained during the manufacture process and storage at two temperatures. • Rosemary extract had similar effect as BHT at both temperatures. • Thyme essential oil had low activity during processing and room temperature storage. |
