Co-fermentation of onion and whey: A promising synbiotic combination

• Onion juice and whey were used for growth of Lactobacillus and Streptococcus strains. • Lactosucrose was produced by bacteria during growth in onion juice and whey. • Inulin present in onion juice remained in the medium after bacterial growth.
