Comparative study of the caseino-glycopeptides obtained after rennin digestion of the caseins of the milk of cow, sheep and goatI. Study of the peptidic partThe peptidic parts of the caseino-glycopeptides obtained after rennin digestion of the caseins of cow (entire, α and κ), sheep and goat have been studied. The percentage of the peptidic part is different for each glycopeptide. The amino acid compositions, similar but not identical, have been determined (absence of arginine and of aromatic and sulphur containing amino acids). The presence of phosphoserine has been shown. No N-terminal amino acid has been detected. The C-terminal amino acids are elanine and valine for the caseino-glycopeptides of cow and glutamic acid and valine for those of sheep and goat. Une etude comparee des parties peptidiques des caseino-glycopeptides formes par action de la presure (''rennin'') sur les caseines de vache (entiere, α et κ), de brebis et de chevre a ete entreprise. L'importance de la partie peptidique varie d'un peptide a l'autre. Les compositions en acides amines, voisines mais non pas identiques, ont ete determinees (absence d'acides amines aromatiques, soufres et d'arginine). Le phosphore est present sous forme de phosphoserine.
