Influence of Inorganic Electrolytes on the Stability and Structural and Rheological Properties of Emulsions Based on Rapeseed Oil

Abstract Formation conditions and structural and rheological properties were studied for emulsions based on rapeseed oil in the presence of aqueous solutions of sodium, potassium, and calcium chlorides and of sodium carbonate and sodium hydroxide.
